Organic Chicken Divan
This week I will be making Chicken Divan. I remember it was one of the first meals I made after I got married. I still enjoy it and my family does too. Have you ever made it? Do you have a different recipe than mine? Here is how we make it.
Ingredients for Chicken Divan:
4 organic-hormone free chicken breast- chopped
4 cups organic broccoli- chopped into small pieces
1 cup mayonnaise-Spectrum organic
1 cup sour cream- organic valley (nondairy version use Sour Supreme Tofutti sour cream- delish!)
1 teaspoon organic curry powder
1 cup grated organic sharp cheddar cheese (nondairy version use Veggie Slices Shreds, Diaya Cheddar cheese and others)
1 tsp sea salt
1 tsp pepper
Once you have chopped the broccoli into small pieces as well as the chicken, layer them in a 9×13 baking dish.
In a medium bowl, combine the mayonnaise, sour cream, curry powder, salt and pepper. Whisk together to make a sauce.
Pour the sauce over the broccoli and chicken. Mix the broccoli, chicken and sauce well with a spatula. Sprinkle cheese on top.
Bake in the oven 350 degrees for 30 min. If your cheese starts to burn, simply cover the dish and continue cooking.
