Kids in the Kitchen Link Up Week 29
Last week in August… I feel as though I was just saying it is the beginning of August. Time flies! Here we are entering fall in a month or so. I do love fall because I love football season! Who else?
Today I am sharing Jambalaya with you. I actually got this recipe from my niece. She was in a kids cookbook by Southern Living.
Ingredients to Make Jambalaya:
1 2/3 cup organic uncooked rice
2 TBS. coconut or olive oil
1 organic onion, chopped
1/2 each organic red, hello, and green pepper
4 organic celery ribs, chopped
3 cups wild caught shrimp
1 lb. organic sausage, sliced
4 organic chicken breasts, chopped
1 (16 oz.) container organic chicken broth
1 (8 oz.) can organic tomato sauce
1 tsp. creole seasoning, optional
Cook rice. Boil chicken until thoroughly cooked. Slice your sausage and saute it in a pan. In a skillet, lightly sauté your peppers, celery and onion. Stir in chicken, sausage, chicken broth and tomato sauce. Bring mixture to a boil. Reduce heat and simmer. Add your shrimp. Continue to cook on low/simmer for 20 minutes or until ready to serve. In a bowl, place your rice and jambalaya on top.

I remember years ago when Cameron sent this receipe to me (Mimi and Pop) we tried it and have made it so many times. Yum,yum!!! I love seeing the boys in the kitchen. I still have the letter he wrote to us telling us how Charlestan made this and wanted to share it with us because he enjoyed so much….Hugs to all!!!!!
