Kids in the Kitchen Link Up Week 26
Today is the first week of August. That means summer is coming to an end and schools will be starting up within the next few weeks. Bummer! I am not ready to get back to the scheduled classroom routine, are you?
My girlfriend made this salsa for me that I am about to share with you. It was delicious! I had to have the recipe. There is a lot of chopping involved, so my boys really like that. It is so easy to make. I have found so many ways to put this salsa on. We love it on chicken, with our fajitas or burritos, chips, and my latest favorite way to use the salsa is in or on top of my omelette.
Homemade Organic Salsa
1/2 organic onion- chopped and diced
1 organic tomato- chopped and diced
1 organic green pepper- chopped and diced
1 organic yellow pepper- chopped and diced
1 organic red pepper- chopped and diced
1/4 cup organic cilantro leaves- chopped and diced
1 drop Young Living Lemon essential oil
1 Tbs. lime juice
1-2 tsp. olive oil
dash of sea salt
When you cut or chop the ingredients for a salsa, make all the ingredients approximately the same size. You don’t what the onions in half-inch pieces and the tomatoes in quarter-inch pieces. Finely chop all the vegetables, add the cilantro and toss. Add lemon essential oil, lime juice, olive oil and sea salt to desired taste. Serve with chips or on your favorite fish or meat. Add as a garnish. Or, just eat it straight out of the bowl, like I do…

My 6 year old made popovers for lunch yesterday which received rave reviews from his siblings. Definitely a recipe to make again. The longest part was waiting for the popovers to bake in the oven.
