Kids in the Kitchen Link Up Week 24
I find myself wondering where my summer went… what did we do? What did I accomplish as far as my “to do” list? I do know that we had a relaxing summer, possibly too relaxing, thus why my chore to do list has not been scratched off.
I hope you are enjoying the rest of your summer.
Today I am sharing my children’s favorite breakfast- crepes. I do not make them, but their grandfather does. They look forward to sleep overs with their grandparents and when they get to wake up to eating crepes with grammy and grandpa.
Over the 4th of July, we were with our family and of course we had crepes. I will be sharing this recipe with you and may you and your kids enjoy it as much as we do.
Homemade Crepes
Ingredients for crepes:
1 1/4 cup organic soft white wheat freshly milled flour
2 organic eggs
1/2 cup Vanilla Almond milk
1/2 cup water
1/4 teaspoon sea salt
2 tablespoons organic non dairy butter, melted
Directions for making crepes
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water and stir. Add the salt and butter; blend until smooth.
Heat a frying pan over medium high heat. Pour the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
Add fresh fruit on top as well as maple syrup and powdered sugar, if desired. Or prior to rolling up the crepe add a preserve filling.

The crepes look wonderful. I should try them with my kids. We made yogurt pancakes recently which turned out thin like crepes. Maybe I’ll try them first in a small pan.

Oh I do love crepes! I make my batter in the blender to get it super thin and well mixed! My favorite combo has to be sliced banana and sugar rolled up!
